Welcome back from the weekend! We were up in Napa for a dear friend’s wedding and are still recovering. It was really spectacular and I can’t wait to wrap up the event in an upcoming post. The weather was picture perfect and I really don’t think I’ve ever seen a more gorgeous event. If you are on Instagram, there were a few peeks from the weekend.
Turning to I have been so excited about making this recipe and sharing it with you. The other night, some sweet friends had us for dinner and Shelley made this amazing Asparagus Summer Salad. I couldn’t stop eating it. It’s that good. I can’t wait for you to try it.
Ingredients
Preparation
1. Drop asparagus into a large pot of boiling water and cook until bright green and slightly softened, 1 to 2 minutes. Drain asparagus and rinse with very cold water until cool.
2. In a large bowl, whisk together lemon juice, mustard, oil, and herbs. Add asparagus, onion, pine nuts, feta, salt, and pepper, and stir to combine.

Even my daughter loves this recipe. It was funny because I made the salad and she tried it. Her response, “Umm. . .it isn’t bad.” She then proceeded to eat four or five more bites with a smile on her face. Let me know if you try it!
