Busy Baking: Black Bottom Cupcakes

Hi all! I never thought I would title a post, “Busy Baking!” but it occurred to me that there are some amazing recipes that my mom made growing up and I need to pass those down to my children. We have spent all day in the kitchen baking six dozen Black Bottom Cupcakes. They are fantastic and the perfect little size for a sweet Christmas treat. It’s hard to have just one, but the rich flavor is definitely worth the calories.

Black Bottom Cupcakes

1 1/2  c. flour

1 c. water 1 c. sugar

1 Tbsp. white vinegar 1 tsp. baking soda

1 tsp. vanilla 1/4 c. cocoa

1/3 c. oil

1/2 tsp. salt

Sift all dry ingredients in food processor. Add remaining ingredients and mix well. Line mini cupcake tins with baking cups and fill 1/3 full { do not overfill}.

Topping:

1 8 oz. package of cream cheese

1 egg beaten 1/8 tsp. salt

12 oz pkg chocolate chips

1/3 c. sugar

Process cream cheese, sugar, and salt. Add beaten egg and process. Remove mixture and stir in chocolate chips. Top each muffin with a dab of the cream cheese mixture. Bake at 350 degrees for 18 minutes. Makes six dozen. Great for packaging up for neighbors!

Growing up holidays with my mom and dad were always magical. I have such fond memories of my mom baking in the kitchen next to the Christmas tree {they still have a tree in the kitchen to this day}. I hope that my children look back at these holiday times and remember how much we all loved just being together. These sweet treats are just icing on the cake. Merry baking!

    We just finished delivering cookies to the neighbors and spreading a little Christmas cheer. These cupcakes sound amazing!! I think I need to whip up a batch of these tomorrow for our Christmas sweet treat. I love that you carry on traditions with your kids. So special. Love your red nails and lipstick.
