Happy Monday, all! We had a great weekend filled with quality time with dear friends. On Saturday, I hosted a party for a group of really special women. Soon we are headed back to the craziness of the school year and I thought it would be fun to throw one more summer soiree to just hang out and enjoy the last of our summer evenings {we have two more weeks until the kiddos go back to school}. It’s no secret that I love to entertain and I am a huge fan of making it as easy as possible. I hope to share some of my tips with you over the next few months. I have some fun things planned for the blog and am anxious to get them rolled out. We were just up in Big Bear with family friends and my dear friend, Jessica, whipped up a delicious dip. I have made it three times since the trip. I made it for our party on Saturday night and for a BBQ we attended just last night. So I am passing it on to you! Easy. Simple. Yummy. Crowd pleaser. What more could you ask for? … …………………………………..the recipe … 1 package of cream cheese {softened slightly} 2 green onions {chopped finely/green portion only} 1/2 jar of pimentos 1 garlic clove {chopped finely} … And that my friends, is it! Mix all of the ingredients and let chill in the fridge for at least two hours. If you are hosting, it’s a great dip to make in the morning and pull out just before the guests arrive. Serve with wheat thins or any cracker of your choice. Yummy!!!!!!!!!!!!!!!!!!!!! ….. This is quickly become a fan favorite over here. Hope you enjoy as well!

I have another tasty, very simple dip to share – if you have any of those homemade dill pickles left! You just chop them and mix into softened cream cheese – add some pickle juice to achieve the consistency that you'd like. That is it! You can also add chopped sweet onion or dill weed, but it is great without! Wonderful served will pretzel sticks (pumpernickel would be ideal)!

I've made something similar for years, my substitution is to add chopped dried beef or salami and not use the pimentos. Also made this like a cheese ball by rolling in chopped pecans. It's a family favorite for us, too.
