Three cheers for Friday! I hope you all have been having a good week. I tried really hard this week to actually get back to meal planning and cooking some new dishes. Why does it seem so overwhelming to sit down and meal plan? I am a huge believer in it and was so good for so long but then I fell of the wagon with it. But I will say that the weeks I actually take 30 minutes to plan out our meals for the week, my life is so much easier. This week I turned to a blog friend to help me with the cooking! Do you know Natalie from Designer Bags and Dirty Diapers? She is a dear friend and can seriously cook. She is always inspiring me and it was high time I dove into her yummy recipes. I basically cooked everything from her recipe files this week! Thanks, Nat!
She recently posted about a fiesta night she hosted and the dishes looked so delicious. Hop on over for the full recipes and run down. And her night looked much cuter. What caught my eye was the crock pot chicken. I am trying to do one crock pot recipe a week. I typically make cilantro lime chicken tacos but it was fun to try something new and the whole family really loved them. To cook the flour tortillas I just hold them over the flame from the gas stove with tongs . . . for about four seconds and then flip them to the other side. They taste great that way.
How yummy does this corn salad look?! The recipe is from Val So Cal via Natalie. My daughter loves corn and had seconds of this salad. It’s so fresh and delicious.
I served the tacos with my families favorite toppings: cilantro, chopped spinach, fresh limes and shredded Monterrey Jack cheese. If I had queso fresco on hand, I also would have served the tacos with that.
I also made one of Natalie’s casseroles this week and it was super delicious. Thanks for hooking us up this week, Nat.

Hi there! Thank you for letting me know. I am doing a happy dance because you got it! It just started with Mad Mini yesterday and thrilled you received it. When I switched to word press something went wrong with feedburner and no one received updates. It’s been so stressful and sad on this end. I have been drooling over Natalie’s recipes for awhile now. That corn sald looks delicious! She always has such a beautiful presentation of her food and cooks a nice variety of things. Courtney, my hubby and I are hooked on your crock pot chicken lime tacos! I’ve made them several times. Delicious and so easy! And, to answer your question…yes, I have scooped up quite a few goodies from the Nordstrom sale, several of your favorites.
