Who wants to skinny dip? Do I have your attention? Have you heard of the cookbook, Skinny Dips? I picked it up in Park City and I am already in love so I wanted to tell you about it. What a great little book. We are big into dips around here. With two kiddos that are active and always hungry I am trying to get creative with avoiding the, “Mommmm! Can I have a snack?!” During summer months, I leave snack bins out, but I have not done that during the school year. It’s just that 5:00 PM hour that kills me. So I am determined to make a healthy appetizer to have out each evening. We can all have a couple of bites and curb the hunger pains before the dinner hour. The first dip I tried is the Parmesan Spinach Dip. Yummmmm!
It was super simple to make and really is scrumptious. We have the best neighbors ever and they have already given the dip two thumbs up and requested the recipe.
Parmesan Spinach Dip
1/2 small white onion roughly chopped
1 clove garlic, smashed
grated zest of 1 large lemon
1 tbsp fresh lemon juice
10 oz of frozen spinach {thawed, water squeezed out}
1/2 cup reduced fat mayonnaise
1/2 cup reduced fat sour cream
1/2 cup freshly grated Parmigiano-Reggiano
1 tsp kosher or sea salt
1/2 tsp freshly ground pepper
Using a food processor, process onion, garlic and lemon zest until finely minced. Add spinach until finely chopped. Add rest of ingredients and process until mixed. Taste and adjust seasoning. Serve immediately. *I did not add any more seasoning and loved the result.
The author of Skinny Dips is Diane Morgan. The book offers beautiful photos by Sheri Giblin and the nutritional facts are provided for each recipe. Love that.
I also scooped up these fun containers from Target for my daughter to take to lunch. They are ideal for humus and veggies or any of the new dips I am planning to try. I like that there is one divider and the lid easily snaps on top.
Next up I will be trying the Tomatillo Guacamole. It had me at, hello. Looks & sounds yummy!
By trying a new dip every couple of days I am hoping to provide a healthy snack for all of us and expand my repertoire. This book is definitely a huge help. Do you have any favorites? Are you ready to try Skinny Dips?!
