To all the men and women who paid the ultimate price for our freedom, thank you. To my dear Uncle Jay, who did just that, thank you. We miss you and love you. This image below reminds me of my neighborhood. The flags are flying high almost daily and that is something I really appreciate and love.
My Uncle lost his life due to effects from serving in Vietnam. I have to share an amazing story about him. On the day my husband and I got married, Jay was snapping away taking pictures {he always had a camera in his hand}. What I did not know is that he disappeared from our reception for an hour. When it was time for us to leave the reception, he handed us an album with photos from our wedding. Unreal. Who gets to go off on their honeymoon with an album of beautiful moments captured that day? Jay was a wonderful husband, father, brother and uncle. We salute you Jay. We salute all those who lost their lives and those that continue to protect our freedoms. And to all of the families of those brave men and women, thank you.
And if you’re looking for a recipe to take to a Memorial Day get together today, I thought these were darling. And if you are not up for making the mini cheesecakes, you could always make muffins or cupcakes from a box. I would just limit how much you fill the cupcake wrappers so you can achieve the same look once you add frosting and fruit. Yum!!!
