Let’s do this Monday! To be honest, although the weekend came around quickly, it went for to fast for my liking. It’s been pretty darn warm around here so we’ve been mixing it up with pool time and then getting things done inside the house. I am still organizing my closet and my husband is knocking out some drywall. Our weekend included a mix of family and friends and a whole lot of food. Here is our Monday morning wrap up.
I am lucky enough to spend Fridays with my mom. After lunch this past Friday we strolled around Target. To be honest, I hadn’t really taken a slow walk up and down the aisles in forever. It was really fun to see what is new and just take it all in. Target always gets it right. Thought this collection of mugs and bowls were so pretty. I am doing my best not to buy things we don’t need in the kitchen so I restrained and maintained my window shopper status!
Yes, yes it does. At least for me! I only drink one cup of coffee every morning but I seriously love this morning ritual. It’s a bit of a, “Don’t talk to mommy until she’s had her coffee!” situation but that’s ok. I’m good with that!
Our closet is a work in progress but I did borrow an idea from my friend Megan over at Honey We’re Home. I bought a couple of pool noodles from Target and cut them into about 8″ pieces and placed them in my boots. Genius. Now they stand up perfectly. It’s so much better for the integrity of the ankles on the boots . . . and it looks much neater. Most of my shoes are in clear boxes but I keep the ones I wear most often on these shelves.
Local friends! Did you know the Kaleidoscope now has reclining seats in the theater?! We took the kids to see Despicable Me 3 and we were so surprised to see the nice upgrade. I’ll take it! Mama may or may not have snuck in a 15 minute nap.
We had my parents over for dinner and served up the carne asada tacos we love so much. So easy and with a side of corn salad it’s a simple and tasty dinner for summer nights.
I’ve also been making chopped salads frequently. I chop the lettuce and chill it in the fridge. Then I chop cilantro, red onion, peppers, bacon and tomatoes. I also great queso fresco and set it all aside.
Then I top the salad with all of the ingredients which makes a pretty presentation. I wait to toss it with balsamic dressing until the last-minute. This is great with chopped avocado, too.
We enjoyed some time with great friends and the food was fantastic. I had to share this delicious vegetable pizza my friend, Lisa, made. I couldn’t stop eating it. Too yummy not to share.
VEGETALBE PIZZA
INGREDIENTS
- 2 cans crescent rolls
- 16 oz cream cheese
- 2/3 c. mayo
- dill
- oregano
- garlic salt
- parsley
- chopped veggies of your choice ( ie: red and green pepper, tomatoes, green onions, carrots, broccoli, cauliflower)
DIRECTIONS
Line a cookie sheet with foil. Lay out crescent rolls and bake until brown and cool. Mix mayo and cream cheese and spread on crust. Sprinkle on dill, oregano, garlic salt and parsley. Add chopped veggies. Cover tightly with plastic wrap and chill for 4-6 hours. Cut into squares to serve!
Lastly, I posted this photo on Instagram and had so many direct messages asking about the sofa and the artwork. We adore the piece above the sofa. While the room is quite traditional, the artwork adds a bit of edge I like all of my rooms to have. The art is 44 x 60. What does your week look like? Mine is a mix of summertime fun, work and finishing my closet. The kiddos have a camp this week (their only one) so I am hoping they love it. Will be nice to have a couple of hours to get things done.

Wow, your living room is gorgeous! Looks like you had such a fun weekend, too. Weekend Target runs are also my favorite…it takes everything in me not to buy all of their adorable mugs! I definitely need to do a “cabinet clean out” and get rid of the mugs I have no sentimental attachment to so I can buy some newbies.
