This week flew by! I guess having Monday off will do that. I was able to sneak in a coffee and a lunch with two dear girlfriends this week. I am trying to be very intentional about spending more quality time with people I love. It’s just good for the soul and I always walk away with a spring in my step. Today, I wanted to share a scrumptious recipe that I first had when my sister made it. The Hot Sichuan Green Beans are always a crowd favorite. We had them this week and even my 8 year old went back for seconds. There wasn’t a green been left. I promise you’ll be happy if you serve these up!
Why I Like This Recipe: Not only are they easy to make, but these green beans can be made up to two hours ahead of time so if you are entertaining they are a great choice.
Prep and Cook: 15 minutes
Serves: 4-6
Ingredients: 1 lb green beans 2 T. soy sauce 1 T. rice vinegar 2 t. sugar 1/4 t. red pepper flakes {optional } 1/4 t. ground white pepper 1 T. vegetable oil 2 T. minced garlic 2 T. minced fresh ginger
Directions: 1. Rinse and drain beans, trim off ends and discard. Cut into 2-3” lengths. In a small bowl, mix soy sauce, rice vinegar, sugar, pepper flakes and white pepper. Set aside. 2. Set a 10-12 inch frying pan over high heat. When hot, add beans and 1/4 cup water. Cover and cook stirring once, until beans are bright green and slightly crunchy to bite, 3-4 minutes. Uncover and cook until remaining water has evaporated. 3. Add oil, garlic, and ginger to pan, stir until green beans are lightly browned, 1-2 minutes. Stir in soy sauce mixture and add to pan, bring to a boil and stir until most of the liquid has evaporated and the sauce thickens and coats beans, 2-3 minutes. Place in a serving dish. *You can make up to 2 hours ahead; cover and let stand.

Just reading your post about Chicken and Dumpling soup and wound up looking at the other recipes. The first time I had these green beans was also at your sister’s house. They are a firm favorite with us too. The recipe is originally from Sunset magazine.
