If you are looking for a quick and scrumptious shrimp dinner, this is it. It’s high in protein and fiber and so yummy. It comes together in less than ten minutes and is so tasty. I hope you enjoy it as much as we do. These shrimp and zucchini noodles are a favorite of mine for both lunch or dinner.
SO YUMMY
I first made this when my son and husband were out of town. I wanted a healthy but quick dinner and this came together so easily. The recipe below is for one, but you can easily use all of the shrimp and zucchini noodles if you are feeding more people.
I am always looking for ways to make a healthy lunch for myself, so this works really well.
I always have this wild caught shrimp (from Trader Joe’s) in my freezer. I can’t tell you how many nights it has saved us. You can defrost it (under cold running water) in about ten minutes and it’s easy to marinade for about 30. It’s great source of protein, too.
Zucchini noodles are an excellent source of fiber and so yummy in a dish like this. I’ve been wanting to make my own, but in this case, I grabbed the ones ready to go from Trader Joe’s. They take only 2 minutes to cook.
Shrimp & Zucchini Noodles
Ingredients
- 1/2 lb wild caught shrimp
- 5 tbsp olive oil (divided 2 tbsp and 3 tbsp)
- 1 cup zucchini noodles
- 1 tsp sriracha
- 1/2 tsp cumin
- 1/2 tbsp chili powder
- 1/2 tsp good quality sea salt (I like Maldon's)
- 1/8 tsp pepper
- 1 tbsp chipped cilantro
- 1/2 avocado, diced
- 3 cloves garlic, chopped
Instructions

place 1/2 lb shrimp (1/2 bag) in a colander and defrost with cold, running water

once defrosted, pat dry
prepare marinade

combine 3 tbsp olive oil, sriracha, cumin, chili powder

add dry shrimp to a ziplock back and pour marinade over it

be sure the marinade coast the shrimp well, refrigerate for 30 minutes, remove from fridge and begin the noodles
prepare noodles
-
heat 2 tbsp of olive oil in a pan, add noodles and cook for 2 minutes

once soft, remove from the pan and plate
for the shrimp

place chopped garlic in the same pan, heat for one minute

pour shrimp and marinade into pan, cook for 2-3 minutes (flip half way through)

pour shrimp onto the noodles (be sure to use get all of the garlic and marinade from the pan)

top with cilantro, avocado, sea salt and pepper
