Summer Shrimp Salad: Super Simple

We are still three week away from finishing school. Can you believe it? So while our days are not yet filled with swimming and the beach, our dinners have gotten progressively more summer like. I love this time of year for easy, simple recipes. This is nothing fancy, but honestly one of my favorite salads.

We usually have chicken lettuce wraps once a week and I used the hearts of romaine from Trader Joes to make them. So the next night I chop the leftover romaine and make this salad. Of course, adding spinach leaves to the plate first would make this that much healthier. I buy the already cooked frozen shrimp and keep it in the freezer at all times. The Alaskan one from TJ is my favorite. Fresh shrimp would be great, too.

Summer Shrimp Salad

  • chop romaine and place on plate
  • sautee shrimp in a pan with a tablespoon of butter and two cloves of garlic { this is after thawing the shrimp in a colander for about five minutes under running cold water}
  • add shrimp, cherry tomatoes, blue cheese and cilantro {avocado optional}
  • sprinkle with fresh ground pepper

Here is the kicker. You don’t even need a dressing. I promise. Both my husband and I eat this without dressing and have never thought twice about it. The garlic shrimp plus the juicy tomatoes and blue cheese are more than enough flavor. Just don’t forget the cilantro! So yummy.

    This is one of our favorite summer salads! We find ourselves eating it sometimes 3-4 times a week. Love it! Sometimes I'll sprinkle a tiny fresh lemon over it but you're right it doesn't need any dressing. Have a great Monday Courtney!

      I might enjoy it with lemon as cilantro isn't a favorite of mine (I think I read somewhere that it is a love/hate herb).
      Apparently G has outgrown his dislike for greens! I'll never forget him telling me he didn't want any of that salad on his burger. 🙂

    Yum! Sounds delicious and so simple. Love that this time of year. Three weeks left? Wow. Are you on a year round schedule? My girlfriend told me recently that some people have a gene that makes cilantro taste like dish soap to them (she included)…so glad I don't have it…as I love it!!
