So I am not normally one to bust out cooking posts around here. But here is the deal. I am in a rut. Like a major rut. Anyone else? We try to eat healthy and in doing so I sort of get stuck in the routine of making the same dishes over and over. I am forcing myself to venture out. Having said that, I know my limits. I know it has to be simple and not time consuming. This week I tried a new recipe for slow cooker chicken tacos. Can I get an Amen? I made a few adjustments to the original recipe and am sharing it today. My family went bananas. Seriously. They loved it so much and so did I. I hope you’ll find you and your family love them as well. So easy!
cilantro lime chicken tacos a slow cooker recipe
Ingredients:
2 lbs boneless/skinless chicken breasts
3-5 limes
1 1/2 Tbsp of chili powder
1 container of fresh salsa {mild}
corn or flour tortillas
fresh cilantro light sour cream {optional}
Directions: Pound the chicken breasts so they are fairly flat. Place in the bottom of your slow cooker. Mix together the juice of three limes {about 4 Tbsp} and 1 Tbsp of chili powder. Pour over chicken and cook on low for three hours. Once tender, remover from slow cooker and let cool for about five minutes. Shred chicken with two forks. Place back into the slow cooker with the juice and add one container of fresh salsa {fresh salsa is key as opposed to a jar}. Sprinkle 1/2 Tbsp of chili powder over the top and cook 30 more minutes. Stir occasionally. Turn to warm and serve when ready. Easily serves enough tacos for 8 people. This made enough for us to have two meals.
Serve with fresh cilantro on top and lime wedges. A bit of light sour cream on top is optional. We found we didn’t need it at all. Recipe is very juicy and flavorful. A trick to heating your tortillas is to use tongs and heat each one over the gas flame of your stove. I heat each side for about five seconds and they get that yummy, flame broiled taste. So delicious.
I often have trouble finding slow cooker recipes I love. This one is a winner for us. Hope you enjoy if you give it a try. I think it will be a simmer staple. I will have to use this next time I make chicken tacos! Ironic as before I left today, I threw a package of taco seasoning, salsa and chicken in the crock pot. I do like that your receipe doesn't rely on the packaged taco mix! Thanks for sharing!

This recipe sounds great. I am not much of a cook and like easy recipes. I'm glad that you emphasized that the salsa should be fresh because otherwise I'd probably have used jar salsa. I guess you find fresh salsa in the deli? I know that you go to Trader Joe a lot and we are finally getting one here later this year.

Hi Nicole. Not at all. My kiddos can't handle it either and they loved it. Not enough chili powder to really make it spicey.
