Dark Chocolate Peanut Butter Cups

My mouth is watering already. I love making some of our favorite treats at home because you can control the ingredients and leave out the yucky stuff. I promise you, these are amazing! They are decadent, taste like the real thing, and won’t last long. And you can make them in less time than it takes to drive to the store to buy them. With very few ingredients, these dark chocolate peanut butter cups will become a favorite.

The nice thing is that they are pretty rich so one cup does the trick when you need a sweet treat.

I use these silicone cups and this silicone muffin pan to make these. Both great to have on hand. You could just use the muffin pan but I do like the ridges! Or you could skip the red muffin pan and just use the cups and place them on a pan. Traditional paper cups work, too. Many options for these.

While we are big fans of dark chocolate (the one we use), you can absolutely make these with milk chocolate, too. Adding coconut oil to the chocolate will give it that nice sheen (you won’t taste it at all).

The mixture is made of four simple ingredients: organic peanut butter, syrup, almond flour and salt. I like to stick to peanut butter where peanuts are the only ingredient. Mix this together and place in the fridge to solidify. 20 minutes in the fridge will do the trick.

Melt the coconut oil and chocolate. The microwave works, too. I have just always preferred melting the chocolate over a pot of water. Once melted, I bring the pot and bowl to where I am filling the cups and it keeps the chocolate nice and melted while I work with it.

Fill the bottom of each cup with a littles less than one tablespoon of chocolate. You just wanted to cover the bottom and swirl it around to cover the edges a bit.

Then use 1 tsp of filling for each cup. Remove the filling from the teaspoon and stretch it out a bit with your fingers. You want to create a flat shape to place on the chocolate (but not as large as the base).

*The filling here was doubled as I made a batch for a friend. Or you can make extra and freeze! These magnetic measuring spoons are a favorite kitchen item.

Definitely not looking for perfection. Just place the filling in the center of each one so that there is a border of chocolate.

Add a generous tablespoon of chocolate over the top and spread out. Sprinkle with sea salt and place in the fridge to set (I usually let them sit for a couple of hours but I think they would be ready in less time).

Dark Chocolate Peanut Butter Cups

Course Dessert
Servings 12

Ingredients

  • 1 package dark chocolate chips
  • 1 tsp coconut oil

Filling

  • 1/3 cup organic peanut butter
  • 2 1/2 tbsp almond flour
  • 1 tbsp maple syrup
  • 1 pinch sea salt

Instructions

  1. Combine peanut butter, almond flour, syrup and salt. Place in fridge for 20 minutes.

  2. Melt chocolate and coconut oil.

  3. Add a conservative tablespoon of chocolate to each cup.

  4. Flatten out 1 tsp of mixture and place in center of the cup.

  5. Top with a generous tablespoon of chocolate and sprinkle with sea salt.

  6. Place in fridge to set. Peel from cups and enjoy!

  7. *I keep them in a glass container in the fridge. Let sit out for a couple of minutes before eating. You can store them on the counter, too.

    Looks yummy for an Easter treat I don’t mind giving to my family. When you refer to syrup, do you mean maple syrup?
