Good morning, friends! I have a treat for you today. These are a splurge and always a holiday tradtition. I first tried these Salted Caramel Chocolate Chip Bars roughly six years ago at a picnic. I was hooked and so was my family. Hope they will soon become a favorite of yours, too.
These are a rich, melt in your mouth type of cookie bar. They are scrumptious and always a crowd pleaser.
Yields: 18 cookie bars. Prep time: 15 minutes Cook Time: 30 minutes

INGREDIENTS
- 2 1/8 cups all-purpose flour (I often sub Bob’s Red Mill Gluten Free flour)
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 12 tablespoons butter, melted and cooled to room temperature
- 1 cup light brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 large egg yolk
- 2 teaspoons vanilla extract
- 2 cups chocolate chips
- 1/4 to 1/2 cup of caramel ( I use Trader Joe’s)
- sea salt, for sprinkling over caramel and bars
DIRECTIONS
ONE
Preheat oven to 325 degrees. Spray an 11 x 7 glass dish with nonstick cooking spray. Set aside.
TWO
In a medium bowl, whisk together flour, salt, and baking soda. Set aside.
THREE
In the bowl of a stand mixer, mix the melted butter and sugars together until combined. Add the egg, egg yolk, and vanilla extract and mix until smooth. Slowly add the dry ingredients and mix on low, just until combined. Stir in the chocolate chips.
*Warm up jar of caramel and drizzle 1/4 to 1/2 cup of sauce over cookie dough. Do not use the whole jar as the bars will be too goopy! Trust me! I’ve learned.
FOUR
Divide the cookie dough in half. Press half of the cookie dough into the prepared pan, smoothing the top. Pour hot caramel over the cookie dough. Sprinkle caramel with sea salt. Drop spoonfuls of cookie dough over the caramel and spread dough with a spatula until the caramel is covered. Sprinkle the bars with additional sea salt.
FIVE
Bake cookie bars for 30 minutes or until the top of the bars are light golden brown and the edges start to pull away from the pan. Cool bars on a wire rack to room temperature. Cut bars into squares and serve. So yummy!
While I am not usually a milk drinker, a warm salted caramel chocolate chip bar and a cold glass of milk is heavenly. Let me know if you give them a try.

The Salted Caramel Choc Chip Bars are a bell ringer! Could you tell me how long these stay fresh? I will need to make on a Monday, leave town til Thursday and holiday guests arrive on Friday. Would love to have these waiting for them! Or I could just hold off and make on Friday morning.

I’m so excited you plan to make them. As much as I would like to say make them that far in advance, I do think Friday morning would be better. The good news is that they really do not take long. Just remember to melt and cool the butter first thing in the morning before you go to make the recipe. Merry Christmas!!!!

Made using GF flour, and these bars were delicious. Great flavor and texture. However, they were too sweet for my taste, and while I enjoyed one, I couldn’t eat anymore after that and ended up giving them away. They might be better with less sugar and maybe some added pecans, or something to curb the sweetness.
