Good morning. We are soaking up the time we have to use our outdoor space and enjoying dinner outside as much as possible. The other day I made this roasted cauliflower & shrimp salad and it was a huge hit. It’s so flavorful that you won’t miss a heavy dressing which makes it healthy and ideal for the summer months. I’ve teamed up with Walmart Home to share some darling citrus inspired pieces that will bring joy to any summer occasion.
This salad was inspired by Ali from Gimme Some Oven and comes together in just 30 minutes. I adapted it for our family and it’s quickly become a favorite. You can find the recipe below.
AL FRESCO DINING
I’ll take any excuse to dine outside and this table has brought us years of memories. When I spotted the citrus inspired pieces from Walmart I knew they would be perfect for us. The gold bowls are such a fun pop of color and I love anything striped. I used two of the indoor/outdoor lemon runners for this table.
SIMPLE SUMMER SALAD
Making a large salad like this is always an easy summer dinner. Toss it on the table with bowls and let everyone help themselves. I love that the clean up is a piece of cake, too.
These bowls come in a few different colors. I love how deep they are. They will be great for soup, too.
SUMMER STRIPES
I bought a set of 12 of these striped glasses and can already picture us serving up lemonade in Tennessee. I like that they can’t break and look so crisp and clean.
Roasted Cauliflower & Shrimp Salad
So much flavor in this salad. You won't even miss the dressing.
Ingredients
Salad Ingredients
- 1 bag arugula
- 1 ripe avocado
- 2 quartered limes
- 1/2 cup diced red onion
- 1 cup halved cherry tomatoes
- 1-2 tbsp olive oil
- 1 tsp pepper
Roasted Cauliflower
- 1 head cauliflower broken up
- 1 tbsp olive oil
- 1/2 tsp cumin
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- salt and pepper
Shrimp
- 1 lb deveined shrimp
- 1 tbsp sriracha
- 2 tbsp olive oil
- salt and pepper
Instructions
Roasted Cauliflower

Preheat oven to 425º

Line a baking sheet with parchment paper.

Combine cumin, smoked paprika, garlic powder, and onion powder in a small bowl. Add a dash of salt and pepper. Set aside.

Toss cauliflower with olive oil and sprinkle with spice mix. Spread evenly on a pan.

Roast for 10 minutes or until browned.
Shrimp

Wash and drain shrimp. Pat dry with paper towels.

Place in a glass dish with olive oil, juice of one lime and sriracha. Coat well.

Place in the refrigerator for 20 minutes (while cauliflower cooks).

Heat oil (or 1 tbsp butter) in large skillet. Add shrimp.

Cook 1-2 minutes on each side until opaque. Depending on the size of your pan, you may want to do this in two batches.
Assemble Salad

Add arugula to a large bowl. Drizzle with olive oil.

Add all other ingredients.

Sprinkle salad with the juice of a lime and cracked pepper.

Place lime wedges in the bowl for each person to use if desired.

Serve immediately.
This is now the only way I make my cauliflower. You can even toss it in an air fryer if you have one. We use this one every day. It’s beyond flavorful. My daughter, who isn’t a cauliflower fan, eats every bite when it’s prepared like this. It really adds so much flavor to the salad.
